Whipped Coffee (Phitti Hui Coffee)

This Whipped or Phitti Hui Coffee, as you call it in Urdu, is creamy and frothy and super simple to make at home! There’s no need to spend money at coffee shops or buy fancy coffee makers!

What is whipped or phitti hui coffee?

If you guys remember, back when we were all staying at home during the COVID-19 pandemic, the Delgona coffee trend on TikTok. Well, this phitti hui coffee is somewhat like that. Except it’s hot and dates way back before Delgona coffee. I remember my mom making it for us in the 80s and 90s. And she used to make it exceptionally well! This was something home cooks made in Pakistan way before cafe culture took over with their fancy cappuccinos and lattes.

What’s in this homemade cappuccino

Coffee: Instant coffee is best for this as it saves time.

Sweetener: Maple syrup is my sweetener of choice, but you can use cane sugar or even coconut sugar.

Milk: Full-fat milk makes for a thick and creamy coffee. If you can’t tolerate dairy, try using Nutpods creamer or A2 Milk. Cashew and oat milk may be good options, although I have not tried them myself.

How to make it

I remember my mom beating coffee, sugar, and water with a spoon to get a rich and creamy paste before pouring hot milk into the cup. It needs patience and a whole lot of elbow grease! Today, I use a battery-operated, hand-held milk frother to give my poor arm a break! Check out the steps below:

Step 1: Make the creamy coffee mixture

Start by adding coffee, your sweetener of choice, and a spoonful of warm water to a cup. Then lower your milk frother into the cup and start whipping! Make sure to keep the frother lowered fully into the mixture when starting it because it does splatter. Once the mixture has thickened, move it up and down to fully incorporate everything.

Step 2: Add additional flavors

Once your coffee mix is ready, you can add whatever variation of flavorings you want.

Flavor Variations

Pumpkin spice: I add a dash of pumpkin spice on top of the coffee, and that seems to be enough for me. If you want to go a step further, you can add a dash of cinnamon powder as well.

Peppermint Mocha: Add a teaspoon of chocolate syrup and a drop of peppermint essential oil to the mix before adding the hot water and milk.

Step 3: Add milk

Then pour your milk of choice, stir, and enjoy!

Equipment

  • hand held milk frother

Ingredients

  • 1 teaspoons instant coffee
  • 2 teaspoons maple syrup
  • 1 teaspoon water
  • 1 cup whole milk

Instructions

  • In a mug add the coffee, sugar and water. Lower the milk frother into the mug and start whipping the mixture. You will see the concoction go from dark brown to light brown and eventually to a light toffee color. This takes about 30 seconds to a minute but the result is what will be the difference between any old latte and luxurious cappuccino like froth at the top.
  • Once done, pour the hot milk. I tend to enjoy all milk but it can be heavy for some. In that case you can do 2/3 cup milk and 1/3 cup water. Enjoy!

Notes

  1.  Swap 1/3 cup of milk with water, depending on how milky you like your coffee. This will result in a slightly thinner and lighter beverage.
  2. You can replace the maple syrup with sugar, keep it low-carb, and use monk fruit sweetener, stevia, or erythritol.
