Why you’ll love this cottage cheese flatbread
- It is made with just five ingredients. Technically, three, since it would still taste fine if you omit the seasonings and parmesan.
- As I mentioned above, it is nutrient-dense, gluten-free, and low-carb. If you are trying to follow an anti-inflammatory diet and lose weight, you’re in luck!
- It’s easy to make. Throw all the ingredients in a blender or food processor and bake!

What’s in this cottage cheese wrap
Spinach- Spinach adds phytonutrients to this wrap, making it even more nutrient-dense.
Cottage Cheese- The star of the recipe. Use full-fat cottage cheese. Good Culture is a good brand as it isn’t watery. If you use a watery brand, make sure to drain it before making the batter.
Eggs- The whole egg.
Parmesan cheese- Optional but gives a depth of flavor. You can skip it if you don’t have it on hand.
Garlic & oregano. Again, optional, but adds flavor to the flatbread.
How to make it
Begin by preheating the oven to 350ºF/177ºC and lining a quarter sheet pan with parchment paper. Grease the parchment and set it aside.
Next, blend all the ingredients till smooth and pour the batter onto the prepared sheet pan.


Bake till browned and cooked through. This can take 30-40 minutes depending on the temperature of your oven so check at the 30-minute mark.
Let the flatbread cool completely before filling it or it may break apart. Fill with your favorite sandwich fillings, roll the wrap, cut down the center, and enjoy!
Tips to get the best results
- Keep an eye on it while it's baking, as oven temperatures can vary, and I found mine to be a bit browner than I liked at the 40-minute mark. Hence, the range in the recipe card.
- Use a quarter-sheet pan for this recipe, and don’t forget to line it with parchment paper! I found this size to be perfect for the amount of ingredients we use for the flatbread.
- The cottage cheese I used has very little water. Drain the water from your cottage cheese to prevent the batter from being too thin.

Storage
This spinach flatbread is best eaten fresh, but if you need to store it, ensure it is in an airtight container or zip-top bag and reheat it in a toaster oven when ready to eat.

- 1 cup spinach packed
- 2 eggs
- ½ cup full fat cottage cheese
- ¼ c parmesan shredded
- 1 tsp minced garlic
- ½ tsp oregano
Instructions
- Preheat oven to 350ºF. Line a quarter sheet pan with parchment paper. Spray with cooking spray and set aside.
- Add all the ingredients in a food processor or blender and process till smooth.
- Pour the batter onto the prepared sheet pan and bake for 30-35 minutes or till browned on top.
- Take it out of the oven and let it cool completely before filling it with your favorite fillings.
- Finally, roll the wrap, cut it down the middle and enjoy!
Notes
- Oven temperatures can vary so keep an eye and check on your flatbread at the 20-minute mark.
- Use a quarter sheet pan for this recipe and do not forget to line it with parchment!
