Viral Cucumber Salad Jar (TikTok Recipe)

This viral cucumber salad jar is inspired by the TikTok trend that took the internet by storm last summer. It’s creamy and spicy, with umami flavors, and oh-so refreshing! The best part is that it comes together in just 5 minutes! It’s a great grab-and-go salad!

What is the viral cucumber salad TikTok trend?

Who knew cucumber salad would go viral, but thanks to Logan Moffitt, aka The Cucumber Guy, every one of his renditions has racked up millions of views on TikTok! He does not hide his obsession with cucumbers and posts a different version almost daily. The only three permanent features are an English cucumber, a plastic deli container, and a mandoline. And his tagline: “Sometimes you just need to eat an entire cucumber, let me show you the best way to do it”.

Inspired by Logan and a passion to create healthier options, I knew I had to create my own version. I made mine creamy with a sushi twist. Consider it a deconstructed, low-carb version of a California roll! I’m obsessed!

Ingredient Notes

Cucumber: Logan uses an English cucumber, but Persian cucumbers can be used as an alternative. I would not use Garden cucumbers (most common in American grocery stores) as they are thick-skinned, have way too many seeds and thus not as crunchy as the other two.

Onion: I prefer red onion to white or yellow, but you can use any you have on hand without compromising on the taste.

Coconut aminos: Feel free to use soy sauce if you don’t avoid soy and gluten but keep in mind that coconut aminos is less salty than soy sauce and you may need to adjust the salt to taste.

Sesame Oil: Adds a rich, umami flavor signature of Japanese cuisine.

Rice vinegar: Use white vinegar and add a pinch of sugar as an alternative.

Furikake: This is a seasoning made of crushed nori (seaweed), fish flakes and toasted sesame seeds. It gives the salad that fishy flavor and makes it taste like a California Roll.

It is highly recommended, but feel free to omit it if you are unable to find it. Most Asian stores near me carry it, but if yours doesn’t, as a last resort, you can eat the salad with some nori instead or even add a dash of fish sauce.

How to make the Viral TikTok Cucumber Salad Jar

  1. Step 1: Start by slicing the cucumber with a mandoline or a sharp knife straight into the container. Then add the red onions and all the remaining ingredients.

  1. Step 2: Close the lid, shake well and enjoy immediately! That’s it! It’s that easy!

Tips & Variations

  • Be sure to slice the cucumber thinly for optimal results. Use a mandolin for the thinnest slice.
  • If you are not going to finish the whole salad immediately (because let’s face it, not all of us can eat an entire cucumber in one sitting!), I would highly recommend salting the cucumber to draw out the moisture and draining the water after 5 minutes. You can then add the remaining ingredients and then proceed to shake it.
  • Onions also tend to release water into the salad, so consider skipping them in this recipe if you are not planning to eat it immediately. You can add green onions at the end instead.
  • Add some smoked salmon, tuna, or grilled chicken for a heartier, protein rich salad. Cooked shrimp would also work well here. As with sushi rolls, this salad has numerous variations, so feel free to experiment with the ingredients and use what you have on hand.
  • I would enjoy this salad immediately or within 24 hours, as it tends to get soggy. For best results, store it in an airtight container and avoid keeping it too long to maintain the crispness of the cucumbers.

Can I use any other cucumber for this recipe?

Persian cucumbers are an excellent substitute for this recipe. I would avoid using the ones with thick skin, as they are not crunchy, which detracts from the deliciousness of this salad.

Can I make this cucumber salad in advance?

Yes, you can prepare this cucumber salad in advance. Just don’t shake it and keep it refrigerated until ready to eat. Once the ingredients mix, the moisture from the cucumber and onion will make the salad soggy.

What can I eat with this salad?

This cucumber salad would make an excellent accompaniment to my Gluten-Free Chicken Teriyaki, Coconut Shrimp Curry, or even my Beef Khaosuey recipe.

Ingredients

  • 1 English cucumber sliced thin
  • ¼ red onion sliced thin
  • 2 tablespoons mayonnaise
  • 1 tablespoon cream cheese
  • 1 teaspoon Sriracha/hot sauce
  • 2 tablespoons coconut Aminos/soy sauce
  • 2 tablespoons rice vinegar
  • ½ teaspoon sesame oil
  • ½ teaspoon salt
  • ½ teaspoon pepper
  • ½ teaspoon Sesame Seeds
  • ½ teaspoon Furikake optional
  • ½ avocado diced

Instructions

    If u add the salt its waaaay to salty. I also used light sour creame instead of mayo cause someone put an empty bottle in the fridge 🙃. Really really good though. it’s also a really good dressing for cabbage and carrots as well.
