Inspired by the viral cucumber salad trend, my recipe is like a deconstructed California Roll. It’s creamy and spicy, with umami flavors, and oh-so refreshing! The best part is that it comes together in just 5 minutes! It’s a great grab-and-go salad!

What is the viral cucumber salad TikTok trend?
Who knew cucumber salad would go viral but thanks to Logan Moffitt, aka The Cucumber Guy, every one of his renditions has racked up millions of views on TikTok! He does not hide his obsession with cucumbers and posts a different version almost daily. The only three permanent features are an English cucumber, a plastic deli container, and a mandoline. And his tagline: “Sometimes you just need to eat an entire cucumber, let me show you the best way to do it”.
Why you’ll love this cucumber salad recipe
Healthy. The star of this recipe, the cucumber is a hydrating, nutrient-rich food. It contains antioxidants that help to lower inflammation in the body. It is low in calories and can aid in weight management as well.
Low-carb This recipe is low in carbohydrates making it Keto-friendly.
Quick and easy. This recipe is just slicing the cucumber, and onion and then adding the rest of the ingredients straight into the jar.
Extremely versatile. Use what you have and make this salad your own!
The Ingredients
Cucumber – An English cucumber is what Logan uses but you can use Persian cucumbers instead.
Red onion – Green onions are a great substitute.
Avocado – Adds to the creaminess.
Mayonaise & cream cheese – Brings creaminess to the salad.
Coconut aminos – Soy sauce can be used instead.
Sesame Oil – Gives the umami taste.
Rice vinegar – Or use regular vinegar.
Furikake & sesame seeds – Furikake is highly recommended but leave it out if you can’t find it. You can eat it with seaweed instead.
Seasonings – Sriracha, salt and pepper
How to make it
A mandoline is the best tool for this salad but you can use a knife if you don’t have one. Start by slicing the cucumber straight into the container, plastic or glass. then add the red onions and all the rest of the ingredients. Shake well and enjoy! That’s it!
Tips & variations
- Make sure to slice the cucumbers thin to get the best results.
- If you are not going to finish the whole salad immediately (because let’s face it, not all of us can eat an entire cucumber in one sitting!), I would highly recommend salting the cucumber to draw out the moisture and draining the water after 5 minutes. You can then proceed to add the rest of the ingredients.
- Onions also tend to release water into the salad so skip them in this recipe and add green onions last.
- For a heartier salad add some smoked salmon, tuna, or grilled chicken. Shrimp would also work well here.
As with sushi rolls, this salad has so many variations so play with the ingredients and use what you have. @logansfewd videos are a testament to that!
Storage
I would enjoy this salad immediately or within 24 hours as it tends to get soggy. For best results, store it in an airtight container and avoid keeping it too long to maintain the crispness of the cucumbers.
Faq’s
Persian cucumbers are a great substitute for this recipe. I would avoid using the ones with thick skin as they are not crunchy which adds to the deliciousness of this salad.
Yes, you can prepare this cucumber salad ahead of time. Just don’t shake it and keep it refrigerated until ready to eat.
What to eat with cucumber salad
This cucumber salad would make an excellent side with Chicken Teriyaki, Coconut Shrimp Curry, or any other Asian-inspired meal.
