Who knew cucumber salad would go viral, but thanks to Logan Moffitt, aka “The Cucumber Guy”, every one of his renditions has racked up millions of views on TikTok! He does not hide his obsession with cucumbers and posts a different version almost daily. The only three permanent features are:
- an English cucumber,
- a plastic deli container,
- a mandoline,
- And last but not least, his tagline: “Sometimes you just need to eat an entire cucumber, let me show you the best way to do it.”
Inspired by Logan and a passion for creating healthier options, I knew I had to create my own version. I made mine creamy with a sushi twist. Consider it a deconstructed, low-carb version of a California roll! I’m obsessed!

Viral Cucumber Salad Ingredient Notes

Cucumber: Logan uses an English cucumber, but Persian cucumbers can be used as an alternative. I would not use Garden cucumbers (most common in American grocery stores) because they are thick-skinned, have way too many seeds, and thus are not as crunchy as the other two.
Onion: I prefer red onion to white or yellow, but you can use any you have on hand without compromising on the taste.
Coconut aminos/soy sauce: I use coconut aminos in many of the Asian-inspired recipes on the site, like my gluten-free chicken teriyaki. Keep in mind that coconut aminos are less salty than soy sauce, and you may need to adjust the salt to taste.
Sesame Oil: Adds a rich, umami flavor signature of Japanese cuisine.
Rice vinegar: If you don’t have rice vinegar on hand, substitute with white vinegar and add a pinch of sugar.
Furikake: This is a seasoning made of crushed nori (seaweed), fish flakes, and toasted sesame seeds. It gives the salad that fishy flavor and makes it taste like a California Roll.
It is highly recommended, but feel free to omit it if you cannot find it. Most Asian stores near me carry it, but if yours doesn’t, as a last resort, you can eat the salad with some nori instead or even add a dash of fish sauce.

- Add protein: Add some smoked salmon, tuna, grilled chicken, or even cocktail shrimp for a heartier, protein-rich salad. As with sushi rolls, this salad has numerous variations, so feel free to experiment with the ingredients and use what you have on hand.
How to make the TikTok Viral Cucumber Salad Jar

- Step 1: Start by slicing the cucumber with a mandoline or a sharp knife. Add to the container. Then add the red onions and all the remaining ingredients.

- Step 2: Close the lid, shake well, and enjoy immediately! That’s it! It’s that easy!

If u add the salt its waaaay to salty. I also used light sour creame instead of mayo cause someone put an empty bottle in the fridge 🙃. Really really good though. it’s also a really good dressing for cabbage and carrots as well.
