These cardamom date energy balls are made with just 4 ingredients and ready in 10 minutes! Naturally sweet and fiber-rich, these are perfect as a healthy snack in Ramadan or any time of the year. They are meal-prep and freezer-friendly.
3cardamomsskinned and seeds crushed or ¼ teaspoon cardamom powder
½teaspoonrose water
Instructions
Crush cardamoms in a mortar and pestle and pit and halve dates. Set aside.
Put cashews in a food processor and blitz till you get a grainy, sandy texture. Next, add the crushed cardamom, rose water, and pitted and halved dates. Process till everything is fully incorporated.
Take a handful at a time and roll the mix with your palms until you get a ping-pong-sized ball. Lay onto a plate and keep going till the mixture is done.
Notes
Make sure to crush the cardamom seeds fully before adding them to the processor so that they are evenly distributed in the mix.
Use raw cashews for the best results.
You can use Deglet Noor or any other soft date if you can't find Medjool.
