These cardamom cookies will bring an Eastern flavor to the usual cookie. Cardamom and coconut sugar meld beautifully together to give a most satisfying and crisp cookie!

  • 1 cup unsalted butter, room temperature
  • ¾ cup coconut sugar
  • 1 egg
  • 2½ cups all purpose flour
  • 4 cardamoms, skins removed and crushed
  • ½ tsp salt
  • ¼ tsp nutmeg
  1. Beat butter and sugar in a stand mixer or hand held beater till fluffy.
  2. Blend in egg.
  3. In a separate bowl stir together the flour, cardamom, salt and nutmeg.
  4. Stir the dry flour mixture into the butter mixture until just combined.
  5. Half the dough and form into two discs.
  6. Cover with plastic wrap and refrigerate for 2 hours or overnight.
  7. Preheat oven to 325 degrees.
  8. On a lightly floured surface roll out one disc to about ¼ inch thick.
  9. Cut out cookie with the cookie cutters and put onto parchment lined cookie sheet.
  10. Repeat with second disc and bake for about 12-15 minutes or the edges of the cookies just turn brown.
  11. Let cool and then decorate with cookie icing and sprinkles.
