Dark Chocolate Cookie Bars

 

This super easy “Cookie Bar” recipe  is sure to be a winner in your home. It  has wholesome ingredients that are good for you, repairing your body even as you enjoy it. This recipe boasts a pretty impressive lineup. It has almonds, flaxseed, coconut oil, honey and the feel good drug, DARK CHOCOLATE!

I want to take a moment to talk about flaxseed. This seed is tiny but it packs a nutritional punch!

It is a great source of:

  • Omega- 3 essential fatty acids,
  • fiber and
  • lignans.

Omega- 3 essential fatty acids  are “good” fats that have  heart healthy effects and Alpha-linolenic acid, the main component, has anti inflammatory properties.

Flaxseed is also a rich source of dietary fiber. Fiber helps with constipation, Irritable bowl syndrome as well as lowering of blood glucose level.

Flaxseed  has lignans. Lignans are phytoestrogens that are available in great amounts in fiber rich plants. Studies suggest that phytoestrogen rich diets reduce the risk of hormone dependent cancers, heart disease and osteoporosis.

This cookie bar also has honey which is an antioxidant powerhouse. It contains polyphenols which boost the immune system and prevents cancer and heart disease. Consuming raw local honey also helps prevent seasonal allergy.Cookie Bars

Ingredients

Instructions
  1. In a food processor, mix together the almond flour, almond butter, flax meal, salt, 2 tbsp of the coconut oil and half of the honey (1/8 C)
  2. Once mixed, take out and spread in an 8/11 parchment lined pan. This is the "cookie" base.
  3. Put the "cookie" base in the freezer for about 20 minutes to set. This will make it easier to spread the chocolate on top.
  4. In a small sauce pan melt the chocolate along with the rest of the honey and 1 tbsp of the coconut oil.
  5. When ready, spread on top of the "cookie" base.
  6. Lastly sprinkle the goji berries and pistachios
  7. Put in freezer for another 10 minutes
  8. Cut into square bite sized pieces and enjoy!
Recipe Notes
  1. The goji berries can easily be swapped for pomegranate arils, cranberries or even dried cherries.
  2. You can use slivered almonds too if pistachios are not available.
